Pull out your stand mixer and fire up the oven because there’s no better way to say ‘I love you Mum’ than with a batch of decadent cupcakes! Cupcakes Inspired By Other Desserts

Why settle for plain vanilla cupcakes when you can introduce mom to a whole new world of flavours? Delish’s favourite way to spice up their Mother’s Day cupcakes is to “take inspiration from other desserts” and the team here at LDV was more than happy to comply. From stuffing cannolis inside cupcakes to flavouring them to taste just like s’mores, creating an extra special cupcake for mom has never been easier.

Pink Lemonade Cupcakes

Ingredients:

  • 20 strawberries (hulled)
  • 3 ½ cup powdered sugar
  • 1 cup butter (softened)
  • 1 box of vanilla cake mix (plus the ingredients specified on the back of the box)
  • ¼ cup lemonade
  • 1 tablespoon lemon extract
  • pink food colouring
Step 1: Combine the vanilla cake mix with the lemon extract and ingredients specified on the back of the box in a large mixing bowl.

Step 2: Line a muffin tin with cupcake liners and fill them ¾ of the way full with the batter. Place a strawberry in the centre of each cupcake.

Step 3: Bake the cupcakes in an oven preheated to 180°C for 20 minutes. Allow them to cool once done.

Step 4: Beat the butter and half of the powdered sugar together in a large bowl. Once smooth add the lemonade and remaining powdered sugar until the mixture becomes light & fluffy.

Step 5: Fold in a few drops of pink food colouring before spooning the buttercream into a piping bag.

Step 6: Pipe the buttercream onto the cooled cupcakes and garnish with the decorations of your choice.

Tip: Save some strawberries and use them as garnishes for the cupcakes!

S’mores Cupcakes

Ingredients:

  • 24 marshmallows
  • 1 box Devil’s Food cake mix (plus the ingredients specified on the back of the box)
  • 1 tub chocolate pudding (100g)
  • 3 cups graham crackers (crushed)
  • 1 cup chocolate chips
  • ½ cup heavy cream
  • ½ cup sugar
  • 12 tablespoons of butter (melted)
  • pinch of salt
Step 1: In a mixing bowl, combine the crushed graham crackers, butter, sugar and salt.

Step 2: Line a muffin tin with cupcake liners and press a tablespoon of the graham cracker mixture into the bottom of each liner.

Step 3: In a separate mixing bowl, combine the chocolate pudding and the cake mix with the ingredients specified on the back of the box. Spoon the batter into the cupcake liners and bake them in an oven preheated to 180°C for a few minutes less than the instructions specify.

Step 4: In a saucepan, bring the heavy cream to a gentle simmer. Place the chocolate chips in a bowl and pour the hot cream over them. Whisk until smooth.

Step 5: When almost done, remove the cupcakes from the oven and spoon the chocolate ganache onto them before topping them with a marshmallow. Put the cupcakes back in the oven and bake them until the marshmallows are golden brown.

Cannoli Cupcakes

Ingredients:

  • 3 cups powdered sugar
  • 1 ⅓ cup chocolate chips
  • ½ cup butter (softened)
  • ½ cup ricotta
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 block mascarpone cheese
  • 1 box vanilla cake mix (plus the ingredients specified on the back of the box)
Step 1: Combine the cake mix with the ingredients specified on the back of the box in a large mixing bowl.

Step 2: Line a muffin tin with cupcake liners and fill them with the batter. Bake them in an oven preheated to 180°C for about 20 minutes. Allow to cool once done.

Step 3: Beat the ricotta, butter and mascarpone in a mixing bowl until fluffy. Add in the vanilla, cinnamon, powdered sugar and salt and beat until smooth & fluffy before folding in ⅓ cup chocolate chips. Spoon the frosting into a piping bag.

Step 4: Create wells in the centre of the cooled cupcake and fill them with the frosting.

Step 5: Melt the remaining chocolate chips and coconut oil in the microwave in 30-second intervals. Stir until smooth before spooning on top of the cupcakes.

Cocktail-Inspired Cupcakes

Ingredients:

  • 3 large eggs
  • 1 box of vanilla cake mix
  • 4 cups of powdered sugar
  • 1 ⅓ cup vegetable oil
  • 1 ¼ cup champagne
  • 1 cup butter
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla extract
Step 1: Combine the vanilla cake mix, 1 cup of champagne, eggs, 1 teaspoon of orange zest and vegetable oil in a large mixing bowl.

Step 2: Line a pair of muffin tins with cupcake liners and fill them with the batter. Bake them in an oven preheated to 180°C according to the cake mix instructions. Allow them to cool once done.

Step 3: Beat the butter in a mixing bowl until fluffy. Add in the powdered sugar and beat until smooth before adding the remaining champagne, vanilla extract and orange zest. Once combined transfer the buttercream into a piping bag.

Step 4: Pipe the buttercream onto the cooled cupcakes and garnish with orange slices.

Bahama Mama Cupcakes

Ingredients:

  • 5 cups powdered sugar
  • 1 cup butter (softened)
  • 3 tablespoon coconut (shredded & toasted)
  • 2 tablespoon pineapple juice
  • 1 tablespoon white rum
  • 1 teaspoon orange zest
  • 1 can of Sprite
  • 1 box vanilla cake mix
Step 1: In a large mixing bowl, combine the cake mix with the Sprite, orange zest and coconut.

Step 2: Line a pair of muffin tins with cupcake liners and spoon the batter into them. Bake according to the cake mix instructions in an oven preheated to 180°C.
