  1. Monster smoothie bowl: This smoothie bowl is not only made using healthy and affordable ingredients but also gives a scary feel for the spooky season. To make this smoothie bowl you will need to blend 2 cups of spinach, 1 cup of apple that has been chopped and peeled, 1 cup of ice, ยฝ of a frozen banana, 1 teaspoon of honey and lemon juice. Once blended add the mixture to the bowl. Then use fruits, nuts and seeds to create a scary face. This recipe makes 2 bowls so that you can share with someone who enjoys smoothie bowls and the spooky season.
  2. Ghost pancakes: These Halloween ghost pancakes are great to add to your spooky breakfast. They are more cute than scary and of course delicious. If you love pancakes for breakfast then these are perfect. You will need ghost cookie cutters that are about 3-4 inches and an icing bag with a small nozzle icing tip. Whisk 1 โ…“ cups of flour, 6 tablespoons of sugar, โ…“ cup cocoa powder, ยผ cup of cornstarch, 1 tablespoon of baking powder, 1 teaspoon of salt and a ยผ teaspoon of baking soda in a medium bowl. In a separate bowl, whisk together 1 ยผ cup of milk, 3 tablespoons of melted unsalted butter, 1 teaspoon of vanilla extract and 2 eggs. Add the wet ingredients to the dry ingredients and mix until well combined. Donโ€™t worry about the lumps and allow the mixture to rest for approximately 5 minutes. Heat a large nonstick pan and using a ladle pour about ยผ cup into the pan. Cook until bubbles begin to form on top and edges begin to brown and then flip over and cook for a further 30 seconds. Transfer the cooked pancake to a plate and repeat until the batter is finished. Place pancakes on a cutting board and using the cookie cutters, simply cut out the ghost shapes. Use toppings such as whipped cream, hot fudge sauce, sprinkles and blueberries to decorate and bring the ghosts to life.
  3. Bloodshot eggs: Upgrade your normal boiled eggs to creepy bloodshot eggs. Place 4 eggs into boiling water and allow to boil for 10 minutes. Pour out hot water and run under cold water to cool down. Tap eggs lightly on the counter surface to create cracks all around the shells. Fill 2 glasses with warm water and stir in ยฝ teaspoon of white vinegar and a few drops of red food colouring and mix. Add the eggs to the glasses and allow them to stand in the fridge for 4 hours. Once refrigerated, drain the water, peel them and admire your bloodshot breakfast eggs.
  4. Sausage mummies: These are great for kids, they are your simple beef breakfast patties that have been wrapped in strips of puff pastry to give a mummy look. To make 12 mummies, you will need to roll out one sheet of puff pastry and then cut the sheet into ยผ inch strips. Wrap the strips around each frozen sausage patty and place them on a greased baking tray. Bake at 200ยฐC for about 15 minutes until the pastry is puffed and golden brown. Use ketchup to dot two eyes onto each sausage mummy.
  5. Pumpkin smoothie: These pumpkin smoothies are a great way to start Halloween day. They are easy to make and only take about 5 minutes to prepare. To make 2 smoothies you will need to blend 1 cup of milk, ยฝ cup of pumpkin puree, ยฝ cup of yoghurt, 1 tablespoon of maple syrup, ยผ teaspoon of cinnamon or pumpkin pie spice, a splash of vanilla extract and 1 frozen banana. Once well blended, divide the mixture into 2 cups and serve.

Easy Vegetarian Recipes For Halloween

A meal made using vegetarian recipes for Halloween

With the help of BBC Good Food we have been able to find a selection of vegetarian recipes for you to try out for Halloween. Adding vegetarian options to your Halloween party will ensure that everyone is included and enjoys your Halloween party food no matter what their dietary requirements are.

1. Halloween Stuffed Peppers

Ingredients: 4 bell peppers, 25g of pine nuts, 1 teaspoon of olive oil, 1 red onion that has been finely chopped, 1 aubergine that has been chopped into small pieces to fit into the peppers, 200g of quinoa or bulgur wheat or a mixture of both, 2 crushed garlic cloves, 2 tablespoons of tomato paste, zest of 1 lemon and a bunch of chopped basil.


Method:

  • Step 1: Prepare the peppers by cutting the tops off of them and deseeding them. With a sharp knife, you can begin to carve a spooky face to bring your peppers to life.
  • Step 2: Place the pine nuts on a pan and toast in the oven for a few minutes until golden and fragrant.
  • Step 3: Heat the oil in a pan and preheat the oven to 200ยฐC. Add onion to the pan and saute until soft and fragrant. Add in garlic, aubergine and pepper offcuts and cook for another 10 minutes until soft.
  • Step 4: Mix in grains and tomato paste to the vegetables and combine. Cook for 2-3 minutes.
  • Step 5: Remove from the heat and add in the lemon zest, basil and pine nuts.
  • Step 6: Fill each pepper with the mixture and place on the oven pan. Cover with foil and bake for 35 minutes. Remove foil and bake for another 10 minutes.
  • Step 7: Remove peppers from the oven and season and serve!

2. Halloween Nachos

Ingredients:

  • Guacamole: 2 limes that have been juiced, 2 avocados that have been chopped and peeled, 1 bunch of coriander that has been finely chopped.
  • Sweetcorn salsa: ยฝ can of sweetcorn, 200g quartered cherry tomatoes, 1 finely chopped red pepper, 2 thinly sliced spring onions, 3 finely chopped sundried tomatoes, 400g of black beans, ยฝ a teaspoon of cumin, a ยฝ teaspoon coriander powder and a ยฝ teaspoon of smoked paprika.
  • Bat-shaped nachos: 4 tortillas, 1 ยฝ teaspoons of oil and 4 purple carrots cut into sticks.

Method:

  • Step 1: Prepare the guacamole. Add avocado and lime juice to a bowl and mash with a fork. Stir in coriander a little at a time and taste until you reach your desired flavour. Add the guacamole into a small bowl that you would like to use for serving.
  • Step 2: Add all salsa ingredients in a bowl, season with salt and pepper, and add in the remaining coriander. Arrange salsa either in a separate bowl for serving or add on top of the guacamole to allow guests to get a taste of everything at once.
  • Step 3: Place tortillas on a chopping board and brush with oil. Use a cookie cutter or scissors to cut out bat shapes. Try cutting them as close together as possible to help you get as many shapes as you can and to save waste.
  • Step 4: Preheat the oven to 200ยฐC and place tortillas on a baking tray and bake for 4-5 minutes until they are golden brown.
  • Step 5: Arrange the bat-shaped nachos, guacamole, salsa and carrot sticks on a platter and serve!

3. Eyeball Pasta

Ingredients: 100g of cherry tomatoes, 150g of drained mozzarella balls, a bunch of basil, 400g of green tagliatelle, 350g of tomato sauce and 4 tablespoons of pesto.

Method:

  • Step 1: Cut the tomatoes in half and use a spoon to scoop out the seeds. Cut the mozzarella balls in half and place them into the halved tomatoes. Cut the basil into smaller circles and place it in the centre on top of the mozzarella balls to create the eyeball look.
  • Step 2: Bring pasta to boil and heat tomato sauce in a saucepan. Once the pasta is al dente add to tomato sauce and stir in pesto.
  • Step 3: Place pasta in a large serving bowl or divide into smaller bowls and arrange the โ€˜eyeballsโ€™ on top of the pasta and serve!
