1. Mixed Herbed Nuts

This appetiser needs to be made 10-15 minutes before your guests arrive. It is not a snack you can prepare beforehand.

Ingredients

  • 1 cup pecan nuts
  • 1 cup walnuts
  • 1 cup almonds
  • 2 Tbsp of unsalted butter, olive oil or coconut oil
  • 1 Tbsp each of rosemary, thyme and sage
  • ⅛ - ¼ tsp of cayenne pepper
  • 2 Tbsp maple syrup
  • 1 tsp Kosher salt
  • Pistachios (optional)
  • Hazelnuts (optional)
  • Peanuts (optional)
      Method
      1. Preheat your oven to 180 degrees.
      2. Toast nuts on a baking sheet for 8-10 minutes.
      3. Melt butter, olive oil or coconut oil in a saucepan over medium heat.
      4. Once butter is melted or oils are warm enough, remove from heat and allow to cool.
      5. Add rosemary, thyme, sage, cayenne, maple syrup and salt.
      6. Toss toasted nuts in a bowl with warm herbed oil. Ensure it is well-coated.
      7. Serve immediately.

      2. Sour Cream And Bacon Deviled Eggs

      Deviled eggs are a hit for every occasion. Great for snacking and very filling. They are called deviled eggs because they are not prepared the normal way.

      Ingredients

    [*] 12 large eggs [*] ½ cup full-fat sour cream [*] 1- 2 tsps of dijon mustard [*] ½ tsp kosher salt [*] ¼ - ½ tsp of crushed garlic [*] 3 - 4 strips of bacon [*] 1 ½ tbsp chives [*] Ground Paprika to taste

Method

  1. Fill the pot with water just enough to cover the eggs. If you are using a steaming basket, let the water boil and place your basket inside the pot with 6 eggs. Steam over medium heat for about 10 - 15 minutes.
  2. Once eggs are done, place them in ice-cold water to cool down.
  3. Once cooled, peel eggs and cut them in half. Scoop out the yolks and place them in a bowl.
  4. Use a fork to smash the yolk, and add sour cream, mustard, garlic, and salt. Mix until smooth texture and desired seasoning.
  5. Fry the bacon for 5 minutes or until crispy. Once cooled chop it up into small pieces.
  6. Fill a zip lock bag with the egg mixture and snip the corner a bit. Pipe the mixture into the egg whites. If you don’t have a piping bag, scoop out the mixture into the egg whites.
  7. Sprinkle your eggs with chives, paprika and bacon and serve.

3. Garlic Knots

These are like mini pizza snacks just more delicious and easy to make.

Ingredients

Pizza Dough

  • 1 packet of dry instant yeast
  • 1 tsp of sugar
  • ⅞ cup warm water (40 - 50 degrees)
  • 300g flour plus extra for dusting
  • 1 tsp salt 1 tbsp of olive oil and more for greasing the baking tray
Garlic Butter Coating
  • 5 tbsp of unsalted butter
  • 4 cloves garlic, minced
  • ¼ cup parsley minced or dry parsley
  • 1 tsp salt
Method
  1. Stir the dry yeast and sugar in the warm water bowl and leave to proof for 3 - 5 minutes. Side note: ‘If yeast bubbles up it means it’s active, If it doesn’t then you need to use a new packet. Check the expiry date.’ - Nontozakhe Raphadu, Baker
  2. In a bowl, mix the flour and salt. Make a well in the middle and add the olive oil and yeast mixture. Mix until soft and knead for 5 - 10 minutes. If the dough is too dry, add a tsp of water until the desired consistency.
  3. Cover the kneaded dough with a kitchen towel and let it sit for 90 minutes or until it has doubled in size. If you are not in a hurry, you can leave it in the fridge overnight.
  4. Once proofed, cut dough into 4 equal parts. Use 2 set trays to place your dough in and work it until it is 10 x 12 cm rectangles. Cut One rectangle into 2 x 12cm, so you should have 4 equal pieces from one rectangle. Then cut the 4 strips in half and you should now have 8 strips of 2 x 6cm.
  5. Start forming the knots. Stretch out the 2 x 6cm pieces into sticks and tie a knot.
  6. Brush dough knots with olive oil and leave the dough to rise for 90 mins to 3 hours.
  7. Preheat oven to 200 degrees. Once heated place the baking tray in the oven for 12 - 15 minutes or until brown.
  8. While the knots are baking, make the garlic butter.
  9. Melt butter in a saucepan and add garlic, saute for 1 - 2 minutes until fragrant. Add parsley, and set aside to cool.
  10. Once knots are done baking in the oven, take them out and allow to cool for 5 minutes. Once cooled, glaze with the garlic and parsley butter. Serve to your guests.

4. Chicken Curry Salad On Endive Boats

An endive boat is the perfect way to turn chicken into an easy-to-eat appetiser. The salad is topped with curry powder and crushed pineapple, giving a little kick and retro vibe.

Ingredients

Salad:

  • 600g boneless skinless chicken breasts or 3 cups cooked chicken, diced
  • 1 apple diced
  • ½ cup minced green onion
  • 6 heads of endive
  • ¼ toasted almonds
Dressing
  • 2 tbsp plain yogurt
  • ⅓ cup mayonnaise
  • 1 tsp soy sauce
  • 1 tsp honey
  • 1 tsp curry powder
  • Pinch of paprika
  • 2 tsp fresh lemon juice
  • ¼ tsp kosher salt
  • ¼ crushed pineapple
Method
  1. Let chicken saute for about 15 minutes or until cooked. Add salt and pepper to taste.
  2. For the dressing, mix yoghurt, mayonnaise, soy sauce, honey, curry powder, paprika, lemon juice and salt in a medium bowl. Add pineapple and combine.
  3. Add chicken, diced apple and minced green onion into a medium bowl and stir salad dressing.
  4. Separate the endive leaves, stuff with chicken mixture and sprinkle with toasted almonds.
  5. 5. French Cheesy Bread

    Ingredients

    [*] 1 loaf of french bread [*] 4 tbsp of room-temperature of the butter [*] 3 tbsp of olive oil and a little extra for drizzling [*] 1 cup of crushed tomatoes [*] 2 cloves of garlic, 1 finely grated and 1 whole [*] 1 tsp of dried oregano [*] ½ tsp chilli flakes [*] Pink of kosher salt for taste [*] 580g of mozzarella cheese [*] 1 sprig of fresh Italian basil

    Method

    1. Preheat oven to 220 degrees.
    2. Cut French bread in half spread butter drizzle olive oil on the bread and place in the oven.
    3. Add tomato to a small bowl, grated garlic, oregano, chilli flakes and a pinch of salt and combine the mixture.
    4. Rip mozzarella and basil leaves and set aside.
    5. Rub whole garlic clove on the cut side of the bread and add the sauce and mozzarella and basil topping.
    6. Bake until cheese is melted. Remove from oven and leave to cool.
    7. Cut in thin slices and place on a serving tray.
