What you will need:

  • 1 Packet of macaroni, penne, shells, rigatoni or elbow
  • 2 cans artichoke cans (drained)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • ½ cup onion
  • 2 cloves minced garlic
  • ¼ cup wholewheat flour
  • 2 ½ cups low-fat milk
  • ½ kosher salt
  • ¼ black pepper
  • ¼ plain greek yoghurt
  • ¾ cup cheese (any of your favourite)
  • 1 cup spinach or broccoli
  • ⅓ cup freshly grated parmesan cheese

Method

  • Step 1 - Pour water into a pot and bring it to a boil. Add salt to the water and macaroni and leave to cook until al dente.
  • Step 2 - Drain all the water from the pot and add olive oil to the macaroni to keep them from sticking together and set aside.
  • Step 3 - Preheat oven to 350°F and light grease a 3-quart oven casseerol dish.
  • Step 4 - In a deep pot, pour 1 tbsp olive oil and set the heat on medium-high, saute the artichokes for 4 minutes and set aside.
  • Step 5 - Lower the heat to medium-low and add a knob of butter and saute the onions for about 2 minutes until they are clear then add in the garlic. Once the garlic is fragrant and has sauteed well, add the flour to the mix and whisk the mixture for a further minute. Cook until the sauce thickens and season with salt and pepper.
  • Step 6 - Add the macaroni, artichokes, cheese and yoghurt and stir gently. Add the spinach as well to get it wilted in the mixture. If you’re adding broccoli, boil it for 2 - 3 minutes before adding it to the mixture.
  • Step 7 - Pour the mixture into a baking dish and sprinkle parmesan cheese on top and bake at 190 degrees for 20 minutes or until bubbly. Leave to rest for 5 minutes before serving.

  • 2 cups powdered sugar
  • ½ cup butter

  • ½ cup of butter

Method

  • Step 1 - Mix all the Base ingredients together and pour into a square baking oven dish and bake at 350°F for 30 minutes. When done, remove from oven and put aside to cool completely.
  • Step 2 - Mix all the filling ingredients together until creamy and there are no lumps. Then pour on top of the cool brownie base and refrigerate.
  • Step 3 - For the topping, melt the chocolate chips and butter together in the microwave in 30 seconds intervals. Stir in between until smooth, pour over the cold brownie mixture, and refrigerate. Keep in the fridge until it’s nice and hard, and serve to your friends.

Just a side tip: Strictly use peppermint extract and not mint, as the mint extract can make your brownies taste like spearmint and come out too strong.
